Beef Chow Fun is a beloved Cantonese dish featuring stir-fried flat rice noodles, tender marinated beef, fresh bean sprouts, and vibrant scallions, all brought together with a savory soy sauce. This recipe will help you recreate this delicious dish at home with ease.

Ingredients

For the Beef Marinade:

  • 12 oz (340g) flank steak, sliced into 1/4-inch strips against the grain
  • 1/4 tsp baking soda
  • 1 tbsp light soy sauce
  • 1 tsp dark soy sauce
  • 1/2 tsp white pepper
  • 1 tbsp cornstarch
  • 1 tbsp neutral oil (such as canola or avocado oil)

For the Stir-Fry Sauce:

  • 2 tbsp light soy sauce
  • 1/2 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1/2 tbsp sugar
  • 1 tbsp Shaoxing wine (or dry sherry)
  • 1/4 tsp MSG (optional)
  • 1 tsp sesame oil

For the Noodles and Vegetables:

  • 16 oz (450g) fresh wide rice noodles (or rehydrate dried noodles)
  • 4 scallions, cut into 2-inch pieces
  • 1/2 yellow onion, sliced
  • 2 cloves garlic, minced
  • 1 cup bean sprouts
  • 4 tbsp neutral oil, divided for cooking

Instructions

1. Marinate the Beef

In a mixing bowl, combine the sliced flank steak with baking soda, light soy sauce, dark soy sauce, white pepper, cornstarch, and neutral oil. Mix thoroughly and let it marinate for at least 30 minutes to ensure tender meat.

2. Prepare the Noodles

If using fresh rice noodles, carefully separate them. For dried noodles, soak them in warm water for about 30 minutes until they become pliable. Drain and set aside.

3. Cook the Beef

Heat a wok over high heat until smoking hot. Add 2 tablespoons of neutral oil. Add the marinated beef in a single layer and stir-fry for about 2 minutes until browned but not fully cooked. Remove the beef from the wok and set aside.

4. Stir-Fry the Vegetables

In the same wok, add an additional tablespoon of oil if necessary. Stir in the minced garlic and sliced onions, and stir-fry for about 30 seconds until fragrant. Add the bean sprouts and scallions, and stir-fry for another minute until just tender.

5. Combine Noodles and Sauce

Add the prepared rice noodles to the wok along with the stir-fry sauce ingredients (light soy sauce, dark soy sauce, oyster sauce, sugar, Shaoxing wine, and MSG if using). Gently toss everything together to combine. Return the cooked beef to the wok and mix well until heated through and evenly coated in the sauce.

6. Serve
