Japanese Stir-Fried Noodles

Yakisoba is a beloved Japanese stir-fried noodle dish, known for its savory and slightly sweet flavors. Often enjoyed as street food or a comforting home-cooked meal, this recipe showcases wheat noodles tossed with fresh vegetables and your choice of protein, all coated in a delicious homemade yakisoba sauce.

Ingredients

For the Yakisoba Sauce:

  • 1/4 cup Worcestershire sauce
  • 4 teaspoons oyster sauce (or vegetarian stir-fry sauce)
  • 4 teaspoons ketchup
  • 2 teaspoons soy sauce
  • 2 teaspoons sugar (adjust to taste)

For the Yakisoba:

  • 12 oz (340 g) yakisoba noodles (fresh or pre-cooked)
  • 1/2 lb (225 g) protein of your choice (pork, chicken, shrimp, or tofu)
  • 1/2 onion, sliced
  • 1 medium carrot, julienned
  • 1/4 head green cabbage, chopped
  • 2 green onions, cut into 2-inch pieces
  • 3 shiitake mushrooms, sliced (optional)
  • 2 tablespoons vegetable oil (for stir-frying)
  • Freshly ground black pepper (to taste)

Optional Toppings:

  • Aonori (dried seaweed flakes)
  • Beni shoga (pickled ginger)
  • Katsuobushi (bonito flakes)

Instructions

1. Prepare the Yakisoba Sauce

In a small bowl, mix together the Worcestershire sauce, oyster sauce, ketchup, soy sauce, and sugar. Stir until well combined and set aside.

2. Prepare the Noodles

If using fresh yakisoba noodles, gently separate them. If using dried noodles, cook according to package instructions until al dente. Drain and rinse under cold water.

3. Cook the Protein

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add your chosen protein and cook until browned and fully cooked. Remove from the pan and set aside.

4. Stir-Fry the Vegetables

In the same pan, add another tablespoon of oil if necessary. Add the sliced onions and carrots; stir-fry for about 2 minutes until softened. Then add the chopped cabbage and shiitake mushrooms (if using), continuing to stir-fry for another minute until the vegetables are tender yet vibrant.

5. Combine Noodles and Sauce

Return the cooked yakisoba noodles to the pan along with the cooked protein. Pour the prepared yakisoba sauce over everything and toss well to combine. Stir-fry for an additional 2–3 minutes until everything is heated through and evenly coated with sauce.

6. Serve

Transfer the yakisoba to serving plates and garnish with chopped green onions. Top with aonori, beni shoga, or katsuobushi if desired. Enjoy your homemade yakisoba hot!
