Step 1: Cook the Noodles

  1. Boil Water: In a large pot, bring salted water to a boil.
  2. Cook Noodles: Add the noodles and cook according to package instructions until al dente—about 4–6 minutes for fresh noodles or 7–10 minutes for dried. Drain and rinse under cold water. Set aside.

Step 2: Prepare the Scallion Oil

  1. Infuse the Oil: In a wok or large skillet, heat the neutral oil over medium-low heat. Add the white parts of the scallions and sauté for 5–7 minutes until golden and fragrant, avoiding burning.
  2. Add Garlic: Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  3. Make the Sauce: Remove the scallions and set aside for garnish. Turn off the heat and let the oil cool slightly, then add light soy sauce, dark soy sauce, and sugar, stirring until the sugar dissolves.

Step 3: Combine Noodles and Sauce

  1. Mix Noodles with Sauce: In a large bowl, combine the cooked noodles with the scallion oil mixture. Toss well to coat evenly.
