  • Salt (for boiling water)

For the Vegetables:

  • 2 tablespoons vegetable oil
  • 1/2 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 bell pepper (red or green), sliced
  • 1 medium carrot, julienned
  • 1 cup broccoli florets
  • 1 cup snap peas (or snow peas)
  • 1 cup bean sprouts (optional)
  • 2 green onions, chopped (for garnish)

For the Sauce:

  • 3 tablespoons soy sauce (regular or low sodium)
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • 1 teaspoon brown sugar
  • 1 tablespoon rice vinegar

Instructions

Step 1: Cook the Noodles

  1. Boil Water: In a large pot, bring salted water to a boil.
  2. Cook Noodles: Add the lo mein noodles and cook according to package instructions until al dente (about 4–5 minutes). Drain and rinse under cold water to stop the cooking process. Set aside.

Step 2: Stir-Fry the Vegetables

  1. Heat Oil: In a large skillet or wok, heat vegetable oil over medium-high heat.
  2. Sauté Aromatics: Add sliced onion and minced garlic to the skillet. Sauté for about 2 minutes until fragrant.
  3. Add Vegetables: Stir in bell pepper, julienned carrot, broccoli florets, and snap peas. Cook for about 3–5 minutes, stirring frequently, until the vegetables are tender but still crisp.

Step 3: Prepare the Sauce

  1. Mix Sauce Ingredients: In a small bowl, whisk together soy sauce, oyster sauce (if using), sesame oil, brown sugar, and rice vinegar until well combined.

Step 4: Combine Noodles and Sauce

  1. Add Noodles to Skillet: Add the cooked noodles to the skillet with the sautéed vegetables.
  2. Pour in Sauce: Drizzle the prepared sauce over the noodles and vegetables. Toss everything together gently until well combined and heated through, about 2–3 minutes.

Step 5: Serve

  1. Garnish: Remove from heat and garnish with chopped green onions.
  2. Enjoy: Serve your homemade Vegetable Lo Mein hot!
