Ingredients

For the Soup:

  • 8 oz (225 g) rice noodles (or your preferred noodle type)
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 cup shiitake mushrooms, sliced (or any mushrooms of your choice)
  • 1 block (14 oz) firm tofu, cubed
  • 4 cups vegetable broth (or chicken broth)
  • 2 tablespoons rice vinegar (adjust to taste)
  • 1 teaspoon white pepper (adjust to taste)
  • 2 tablespoons soy sauce
  • 1 tablespoon chili paste (adjust for spice preference)
  • Salt to taste

For Garnishing:

  • Chopped green onions
  • Fresh cilantro
  • Sliced red chili peppers (optional)

Instructions

Step 1: Prepare the Noodles

  1. Cook Noodles: In a large pot, bring water to a boil. Add the rice noodles and cook according to package instructions until tender (about 4–5 minutes). Drain and rinse under cold water to stop cooking. Set aside.

Step 2: Make the Soup Base

  1. Heat Oil: In a large pot or wok, heat vegetable oil over medium heat.
  2. Sauté Aromatics: Add minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
  3. Add Mushrooms and Tofu: Stir in sliced shiitake mushrooms and cubed tofu. Cook for about 3–4 minutes until the mushrooms are tender.

Step 3: Add Broth and Seasonings

  1. Pour in Broth: Add the vegetable broth to the pot and bring it to a simmer.
  2. Season the Soup: Stir in rice vinegar, white pepper, soy sauce, chili paste, and salt to taste. Adjust the flavors to your liking; add more vinegar for sourness or more chili paste for heat.

Step 4: Combine Noodles and Serve

  1. Add Noodles: Once the soup is simmering, add the cooked rice noodles. Stir gently to combine.
  2. Garnish: Remove from heat and ladle the soup into bowls. Garnish with chopped green onions, fresh cilantro, and sliced red chili peppers if desired.
  3. Enjoy: Serve hot and relish your homemade Hot and Sour Noodle Soup!
